Coping is the capping that finishes the rim of the pool, and it does more than look tidy. It caps the bond beam, it takes the traffic of everyone getting in and out, and along with the expansion joint behind it, it keeps surface water out of the top of the shell.
When coping fails it is rarely the stone that has failed. It is usually the bedding underneath, the joint behind, or the ground beyond that.

The mortar bed under the coping breaks down, usually because water has been getting in - through a failed joint, through open pointing between stones, or from below where paving drains towards the pool. Once the bed goes, the stones sit on nothing and progressively work loose.
Lifted or Tilted Coping
Stones that have risen, dropped or tilted out of line. Causes include ground heave under reactive soil, tree roots, settlement below, and paving expanding against the coping through a joint that has filled with debris. A change in level along a run is a trip hazard at the worst possible place.
